Christmas Supper and a Cookie Recipe

This weekend has been a bit more relaxing than the past few so I've been able to catch up on a few things.  Around this time of year, I love to get in the baking mood and today was no exception...I baked some yummy cookies....I'm not really sure of their name....but here is the recipe (makes about 24 cookies).   I mean 5 ingredients...what could be easier???

1/2 cup brown sugar
1 cup butter or margarine (softened)
2 eggs
1 tsp vanilla extract - I actually used coconut extract...and I bet orange would be good too.
2 cups flour

Cream sugar and butter together.  Add the eggs and vanilla extract and mix well.  Slowly add the flour.  Roll into balls about an inch big. (if the batter is too soft too roll, place in the fridge for an hour).  Bake in 300 degree over for 6 minutes.  Take out...make a dimple and add a little jam, place back in the oven for 14-16 minutes until nicely golden.  Enjoy!!

Then mom and I were off to my aunt's for an early Christmas dinner.  My aunt is leaving for Korea to visit her son and so we celebrated early.  When we get together, we always reminisce about Christmas's past.  Apparently I opened everyone's gifts one Christmas before everyone was awake....another Christmas I cursed out loud (at the age of 2) because a bow fell off a present....and then there was the time my uncle dressed up as Santa Clause and came to visit...it traumatized me!  We were missing some of my cousins tonight and it wasn't quite the same...but I know they were there in spirit...as my grandmother always is. 

My aunt owns her own business helping people get ready to sell their homes...and she is amazing at it...check out these pics...I absolutely love her knew sofa!!!

The photographer may actually try and sell some of the photo's as stock photos.  Hehe...that would be kind of cool...you know...when you google something and your picture comes up as a stock photo.  LOL  Again....I encourage anyone out there to have photos done...it gives you a new appreciation for how someone else sees you...and can be a lot of fun.  You can check out some of the other shots done yesterday at www.paulwesson.com.
