Custard Pie Review & Still on Track

Like I said yesterday....I was off to make a new-to-me recipe...Custard Pie.

My mom had posted this yummy looking recipe on facebook and I felt I needed to give it a whirl.

First things first....the recipe given on facebook was wrong!  Thankfully I read all the comments posted to determine what the right recipe was!

Custard Pie
6 eggs
1/2 cup sugar
2 cups milk
1/2 teaspoon nutmeg
1/2 teaspoon salt
1 teaspoon vanilla

Preheat oven to 425. Lightly beat the eggs, add remaining ingredients and beat REALLY well.  Poor into unbaked pie shell.  Bake for 15 minutes at 425, reduce to 350 and bake another 45 minutes or until set.

I have to admit, I am not really a fan of this pie.  It's pretty bland tasting (hence the large amount of cinnamon sprinkled on top), if not a bit eggy. It is a light, fluffy custard....and maybe if I'd added a bit more vanilla to the original recipe it would have tasted a bit better.  Either way, I now have about 1/2 a pie left to eat.

Thought I'd take another picture of my work snacks just to show you that I'm keeping up with my healthy eating goal for September.
Clockwise we have celery sticks, cucumber slices, grapes, yogurt, and chunks of cheese.

With a 5k race scheduled for Saturday, I am actually planning on riding the stationary bike and stretching all week...saving a run for Saturday in the hopes that I can make it the full 5k without any knee pain!!!

  2. Custard tastes a little eggy to me as well sometimes, I am not sure what it is. I am going to give it a try though! :-)
