Most evenings I am personal or group fitness training until 7:30 which doesn't leave me a lot of time to get ready for the next day (I'm an early to bed, early to rise person). This means meal prepping is even more important! This week I had grapes, egg muffins, crackers, etc packed for 3 days (then I ran out of stuff) and told myself that I'd make more on Wednesday night. Well I didn't.
That means for Thursday and Friday, I've just been throwing stuff together...and it sucks. It makes me feel unorganized...it makes me feel like I am on a slippery slope of falling off the 'prepping' wagon. But never fail...I do recognize this...and I'll be back at it on Sunday! Meal prepping can take about an hour (or more if you are more elaborate) but saves so much time during the week! If you've never made egg muffins, I urge you to do so! So easy and they reheat so well. I do suggest using a silicone muffin tray as they simply pop out when done!!

25-35 minutes at 350 degrees. These ones had peppers, broccoli and cheese.
One egg = one muffin.
In other news...My new, but short lived, addiction is Lulu Scuba Hoodies. I have one that my mom gave me 10 years ago...still in great shape. Then I saw this neon one on a local facebook site...selling at less than half the retail price....had to have it.
The next day....two more showed up from a seller....so I kind of put my 'cute' face on and asked mom and J to each buy me one. Hehehe. They are sooooo comfy and will last forever!!!
