Today was run #2 for the Timberlea Tundra Pounders. We had some new faces today as well as some repeats from yesterday! Already I can see some friendly banter happening and cheerful hellos to familiar faces...Love it!!! Unfortunately mother nature decided that we needed a bit of rain today. Never fear, the group was well represented....and a boy showed up....I was so excited!

One of the members from today is going to post an event that is going to mix it up a bit with shorter distance, speed work and some dynamic cross training drills like squats and lunges....I'm really excited and can't wait to join that run. Sometimes the same old, same old can get tiring and switching it up gives our muscles something to complain about.
And just a trick to everyone out there who may not know.....when your sneakers are wet, stuff them with newspaper and they will dry much quicker!
Last night for supper I decided to try a recipe for Salsa Chicken Bake. YUMMY! and so simple!!!
Recipe
1 cup rice -uncooked
1 can black beans - rinsed
1 cup corn
1 jar of salsa
chilli powder
oregano
salt & Pepper
2 boneless skinless chicken breasts
shredded cheese
green onion
Preheat oven to 375 degrees. In an 8x8 casserole dish, combine all ingredients except chicken, cheese and green onion. Cut each piece of chicken into 3 pieces and push into salsa mixture. Cover loosely with foil and bake for 1 hour. In the last five minutes, pull from oven and cover with shredded cheese and sprinkle with green onion, place back in the oven to melt. Serve and enjoy!!! Easy Peasy in my books!!!

DeleteSalsa chicken is delicious! We make it in our crockpot and absolutely love it! :)
